Dubh Glas (dugh-luhs) in Gaelic means “from the dark water” and is reflective of the source water used in the making of our feature spirits. A well on the property is where we source our pure ‘dark’ water, which is fed by an underground aquifer. That source water from the ‘dark depths’ has been filtered from the glacial mountain peaks all the way to the Okanagan Valley free of pollutants and surface contamination. It is also reflective of Grant Stevely, the artisan distiller, who has shared the name in his family for generations.
It’s not just about the whisky at the Dubh Glas Distillery – although it is our first priority. It’s about a passion to create a distillery from the ground up that uses the finest raw products and materials available. From the Canadian barley and select botanicals in Noteworthy Gin, to the cooperage making our whisky barrels, every step of the process has been thoroughly researched before it is used in crafting our spirits.
We want to showcase our Dubh Glas products however, we also want to educate our customers about our distilling process and highlight everything the world of whisky, gin and spirits have to offer in the emerging Craft Distilling industry.

Stevely’s love of single malt whisky and complex quality spirits has grown to an appreciation where he has offered whisky tastings corporately, privately and at the international destination Resort where he worked before moving to the Okanagan Valley. He has increased his knowledge and experience by visiting multiple artisan distillers from the west coast and across Canada to the popular distilling regions in Scotland. Meeting and discussing distilling with craft distillers across Canada, attending whisky events, and his love of whisky and spirits brought him to experiment in small batches at home before making the leap to become a true Craft Distillery in the heart of the wine region of BC. He has travelled to the United States to attend workshops on both distilling and distillery operations that gave him the experience and education to help him now produce some of the highest quality spirits you will ever get a chance to taste from a micro distillery.
Enthusiasm coupled with passion for quality spirits and ingredients has given him a distinct advantage in running a distillery producing artisanal spirits that consumers will taste in every bottle he produces. More >

Our award winning Noteworthy Gin is our initial signature release which is a hand-crafted, small batch gin made from 100% British Columbian grown barley, carefully fermented in stainless steel and then transferred to our German copper pot still. After three precision distillations – two to clean the spirit and one to infuse our botanicals, it is then both hand bottled and labeled allowing constant monitoring of the quality control process.
Ceres, the Roman Goddess of agriculture and grain crops, inspired this exquisite gin recipe.
